Pina Colada Smoothie Bowl

If you’ve been following my blog for some time, you know that one my go-to breakfasts is a smoothie bowl. I love making smoothies for a few reasons: 1) It is a breakfast you can make in less than 5 minutes. 2) It is made with primarily frozen ingredients. I love using frozen produce because it is nutritious, typically less expensive than fresh produce, and it doesn’t expire quickly. 3) They taste AMAZING! It’s literally like you are eating dessert, except my smoothies are packed with fruits and veggies. Smoothies are such an easy way to consume a ton of veggies. In the spirit of summer, I was inspired to make a Pina Colada Smoothie Bowl. This smoothie is made with just four simple ingredients. You read that right, ONLY FOUR INGREDIENTS!

What You’ll Need:

Pineapple: Of course. You cannot make a pina colada without pineapple! Pineapples are full of nutrients, contain antioxidants, and can help fight inflammation1. They are also so incredibly delicious.

Lite Coconut Milk: You can used canned or a carton of lite coconut milk. The canned coconut will specifically be labeled as lite. A carton of coconut milk is typically lower in fat than canned coconut milk, but double check the nutrition facts to ensure you are buying a lite coconut milk.

Frozen Riced Cauliflower: This is probably my favorite smoothie ingredient. If you haven’t tried adding frozen riced cauliflower to your smoothie, I definitely recommend trying. I was skeptical at first when I heard of adding cauliflower to smoothies, but it is my favorite trick. It adds bulk to your smoothies without adding any flavor. Not only does it help create a thick and filling smoothie, but it also loads it with veggies and you can’t even taste it!

Unflavored Collagen Peptides: I like adding a scoop of unflavored collagen peptides to my smoothie bowls. This is a form of protein powder that adds protein to your smoothies also without adding any flavor. Protein is important because it helps keep you feeling full and satisfied.

  • 1 1/2 cup Frozen Pineapple cubed
  • 3/4 cup Frozen Riced Cauliflower
  • 1 cup Coconut Milk Lite
  • 1 scoop Collagen Peptides unflavored
  • Fresh Cherries, Coconut Flakes optional toppings

Instructions
 

  • Blend until smooth, top with toppings if desired, and ENJOY!
