Pina Colada Smoothie Bowl

Smoothies are a great, nutritious breakfast option for busy people. That’s for a few reasons: 1) They can be made in less than 5 minutes. 2) They are primarily made with frozen produce, which is not only nutritious, but also typically less expensive than fresh produce and doesn’t expire as quickly. 3) They taste AMAZING! It’s like you are eating dessert for breakfast, except my smoothies are packed with fruits and vegetables. In the spirit of summer, I was inspired to make a Pina Colada Smoothie Bowl. This smoothie is made with just four simple ingredients. You read that right, ONLY FOUR INGREDIENTS!

What You’ll Need:

Pineapple: You, of course, cannot make a pina colada without pineapple! Pineapples are full of nutrients, contain antioxidants, and are incredibly delicious.

Lite Coconut Milk: You can used canned or a carton of lite coconut milk. The canned coconut will specifically be labeled as lite. A carton of coconut milk is typically lower in fat than canned coconut milk, but double check the nutrition facts to ensure you are buying a lite coconut milk.

Frozen Riced Cauliflower: If you haven’t tried adding frozen riced cauliflower to your smoothie, it’s worth a try. I was skeptical about adding it at first, but now it is my favorite smoothie trick. That’s because the frozen riced cauliflower adds bulk to the smoothie without adding flavor. Not only does it help create a thick and filling smoothie, but it also loads it with veggies that you can’t even taste!

Unflavored Collagen Peptides: Unflavored collagen peptides add a boost of protein to this smoothie also without adding any flavor. Protein is an important component of meals because it helps keep you feeling full and satisfied.

Note: Not all protein powders are safe to consume during pregnancy. If pregnant, consult your doctor or dietitian prior to consuming protein powders.

How to Make Pina Colada Smoothie:

Blend until smooth, top with toppings if desired, and ENJOY!

  • 1 1/2 cup Frozen Pineapple cubed
  • 3/4 cup Frozen Riced Cauliflower
  • 1 cup Coconut Milk Lite
  • 1 scoop Collagen Peptides unflavored
  • Fresh Cherries, Coconut Flakes optional toppings

Instructions
 

  • Blend until smooth, top with toppings if desired, and ENJOY!
