Pineapple Coconut Overnight Oats

Meet my latest breakfast obsession – Pineapple Coconut Overnight Oats! I was inspired by my Pina Colada smoothie bowl to make this overnight oats combo and it is SO. GOOD. The pineapple and coconut combination tastes so refreshing and delicious. It is the perfect overnight oats recipe for the summer. This recipe is gluten-free, dairy-free, refined sugar free and is so simple to make!

On Sundays, I usually like to meal prep overnight oats for breakfast for the week. It is literally so easy to make and then I have breakfast already made for the entire week. I make five overnight oats jars all at once and let them sit overnight in the fridge. Then, on Monday I just reach into the fridge and grab a jar for breakfast. It couldn’t be easier! I like to re-purpose glass nut butter jars and use them for my overnight oats. Re-purposing glass nut butter jars is a great way to reduce waste and use of plastics.

What You’ll Need:

Oats: You will need to use quick oats or rolled oats for this recipe. If you need to be gluten-free, be sure to purchase gluten-free rolled oats.

Coconut Milk: You will need lite canned coconut milk for this recipe.

Pineapple: You can use fresh or frozen sliced pineapple in this recipe.

Chia Seeds: Chia seeds are packed with nutrients and an excellent source of fiber.

Honey: Honey adds some extra sweetness to the overnight oats.

How to Make Pineapple Coconut Overnight Oats:

  1. Mix all ingredients in a bowl and place them in the fridge overnight. Enjoy the next day!

Pineapple Coconut Overnight Oats

These Pineapple Coconut Overnight Oats make the perfect summer breakfast!

Servings 1 bowl

Ingredients
  

  • 1/2 cup Gluten Free Rolled Oats
  • 3/4 cup Coconut Milk lite
  • 1/2 cup Sliced Pineapple
  • 1 tbsp Chia Seeds
  • 2 tsp Honey

Instructions
 

  • Mix all ingredients in a bowl and place them in the fridge overnight. Enjoy the next day!

Notes

Make sure to use liquid coconut milk and not coconut cream.
