These Pineapple Coconut Overnight Oats are my favorite summer oatmeal recipe. I was inspired by my Pina Colada Smoothie Bowl to make this overnight oats recipe and it is SO GOOD. The pineapple and coconut combination tastes so refreshing and delicious. This recipe is gluten-free, dairy-free, refined sugar free and so easy to make!
On Sundays, I usually meal prep breakfast for the week. Overnight oats literally take a couple of minutes to assemble. Just by taking those few minutes to prepare overnight oats, I have breakfast made for the entire week.

What You’ll Need:
Oats: You will need to use quick oats or rolled oats for this recipe. If you need to be gluten-free, be sure to purchase gluten-free rolled oats.
Coconut Milk: You will need lite canned coconut milk for this recipe.
Pineapple: You can use fresh or frozen sliced pineapple in this recipe.
Chia Seeds: Chia seeds are packed with nutrients and an excellent source of fiber.
Honey: Honey adds some extra sweetness to the overnight oats.
How to Make Pineapple Coconut Overnight Oats:
- Mix all ingredients in a bowl and place them in the fridge overnight. Enjoy the next day!

Ingredients
- 1/2 cup Gluten Free Rolled Oats
- 3/4 cup Coconut Milk lite
- 1/2 cup Sliced Pineapple
- 1 tbsp Chia Seeds
- 2 tsp Honey
