Blueberry Baked Oatmeal Meal Prep

If you haven’t tried baked oatmeal, it is a complete game changer! I love the blended texture of this oatmeal bake and it makes the perfect, make- ahead breakfast for the week. To make the blueberry baked oatmeal meal prep, all you need to do is blend ingredients, then bake in the oven. And just like that, you have six servings of baked oatmeal prepped and ready to be eaten.

What You’ll Need:

Rolled Oats: You, of course, can’t make an oatmeal bake without oats! I prefer using rolled oats. If you are gluten- free, be sure to purchase ‘gluten-free rolled oats’ as there is cross-contamination with regular oats.

Almond Milk: Use an unsweetened almond milk, which has 0 grams of added sugar. The maple syrup sweetens this recipe enough. Or use your own homemade almond milk.

Maple Syrup: Maple syrup sweetens this recipe. If possible, use a natural maple syrup that is only made with one ingredient: maple syrup.

Chia Seeds: Chia seeds are packed with nutrients and an excellent source of fiber.

Blueberries: You can use fresh or frozen blueberries in this recipe. Frozen blueberries are just as nutritious as fresh blueberries. Plus they tend to be less expensive and last longer in the freezer.

Baking Ingredients: You will also need vanilla extract, baking soda, and a pinch of salt to make this recipe.

Almond Butter: If you like, you can top each serving of baked oatmeal with about 1 tbsp of almond butter.

How to Make the Blueberry Oatmeal Bake:

  1. Add all ingredients, except for the blueberries to a blender and blend until smooth.
  2. Lightly spray a baking dish with oil spray.
  3. Place the blended ingredients into the baking dish. Then, evenly distribute 1 cup of blueberries across the mixture.
  4. Bake at 375 degrees for 30 minutes.
  5. Allow the baked oatmeal to cool. Then, using a spatula, cut into 6 slices.
  6. Remove a slice and serve! Store leftovers in the refrigerator.
  7. Optional: Top each slice with 1 tbsp of almond butter before serving.

  • Baking Dish
  • Blender
  • Oven

Ingredients
  

  • 3 cups Rolled Oats
  • 3 cups Almond Milk unsweetened
  • 1/3 cup Chia Seeds
  • 1/3 cup Maple Syrup
  • 1 1/2 tsp Vanilla Extract
  • 1 tsp Baking Soda
  • pinch Salt
  • Olive Spray
  • 1 cup Blueberries
  • 6 tbsp Almond Butter optional

Instructions
 

  • Add all ingredients, except for the blueberries to a blender and blend until smooth.
  • Lightly spray a baking dish with oil spray.
  • Place the blended ingredients into the baking dish. Then, evenly distribute 1 cup of blueberries across the mixture.
  • Bake at 375 degrees for 30 minutes.
  • Allow the baked oatmeal to cool. Then, using a spatula, cut into 6 slices.
