In this recipe, I blended the oats prior to baking. This enables the oats to bake into a cake-like texture. It’s like you’re eating dessert for breakfast! This Chocolate Peanut Butter Baked Oatmeal is a single-serve recipe. What You’ll Need:

Rolled Oats: You, of course, can’t make an oatmeal bake without oats! I prefer using rolled oats. If you are gluten- free, be sure to purchase ‘gluten-free rolled oats’ as there is cross-contamination with regular oats.

Almond Milk: Use an unsweetened almond milk, which has 0 grams of added sugar. The maple syrup and chocolate chips sweeten this recipe enough. Or use your own homemade almond milk.

Maple Syrup: Maple syrup sweetens this recipe. If possible, use a natural maple syrup that is only made with one ingredient: maple syrup.

Cacao Powder: Cacao powder gives this recipe a chocolate flavor. It taste bitter by itself, but the maple syrup balances this flavor to give the baked oatmeal a sweet, chocolate taste.

Chocolate Chips: Chocolate chips give this recipe some added sweetness. If you need to make this recipe dairy free, be sure to use dairy-free chocolate chips. If you need to make this recipe low FODMAP, be sure to use a dark chocolate that is low FODMAP.

Peanut Butter: You, of course, can’t make baked chocolate peanut butter oatmeal without peanut butter! If possible, use a natural peanut butter that doesn’t contain added sugar.

Chia Seeds: Chia seeds are packed with nutrients and an excellent source of fiber.

Baking Ingredients: You will also need vanilla extract, baking soda, and a pinch of salt to make this recipe.

How to Make the Chocolate Peanut Butter Baked Oatmeal:

  1. Blend all of the ingredients except for the chocolate chips.
  2. Place blended ingredients in a small, oven safe baking dish. Top with chocolate chips.
  3. Bake at 350 degrees for 15 minutes. Allow to cool before serving.

Instructions
