Blueberry Baked Oatmeal

This Blueberry Baked Oatmeal is a great, healthy breakfast to meal prep!

Ingredients
  

  • 3 cups Rolled Oats
  • 3 cups Almond Milk unsweetened
  • 1/3 cup Chia Seeds
  • 1/3 cup Maple Syrup
  • 1 1/2 tsp Vanilla Extract
  • 1 tsp Baking Soda
  • pinch Salt
  • Olive Spray
  • 1 cup Blueberries
  • 6 tbsp Almond Butter optional

Instructions
 

  • Add all ingredients, except for the blueberries to a blender and blend until smooth.
  • Lightly spray a baking dish with oil spray.
  • Place the blended ingredients into the baking dish. Then, evenly distribute 1 cup of blueberries across the mixture.
  • Bake at 375 degrees for 30 minutes.
  • Allow the baked oatmeal to cool. Then, using a spatula, cut into 6 slices.
  • Remove a slice and serve! Store leftovers in the refrigerator.
  • Optional: Top each slice with 1 tbsp of almond butter before serving.
