Blueberry Baked Oatmeal
This Blueberry Baked Oatmeal is a great, healthy breakfast to meal prep!

- 3 cups Rolled Oats
- 3 cups Almond Milk unsweetened
- 1/3 cup Chia Seeds
- 1/3 cup Maple Syrup
- 1 1/2 tsp Vanilla Extract
- 1 tsp Baking Soda
- pinch Salt
- Olive Spray
- 1 cup Blueberries
- 6 tbsp Almond Butter optional
Add all ingredients, except for the blueberries to a blender and blend until smooth.
Lightly spray a baking dish with oil spray.
Place the blended ingredients into the baking dish. Then, evenly distribute 1 cup of blueberries across the mixture.
Bake at 375 degrees for 30 minutes.
Allow the baked oatmeal to cool. Then, using a spatula, cut into 6 slices.
Remove a slice and serve! Store leftovers in the refrigerator.
Optional: Top each slice with 1 tbsp of almond butter before serving.
