Sweet Potato Nachos

I recently got a mandolin slicer and love it. It slices vegetables super thin, which is ideal for making chips. Lately, I’ve been making beet chips and sweet potato chips in my air fryer and they come out so good every time. I love making Sweet Potato Nachos and my new mandolin slicer was the perfect excuse to make them. This recipe is a great healthy alternative to nachos. It’s rich in veggies and also gluten free and vegan. These nachos make the perfect, healthy Football Sunday snack or party snack.

What You’ll Need:

You can really top these nachos with any toppings you desire, but I will include the details of the ingredients that I used to make this recipe.

Sweet Potatoes: You, of course, can’t make sweet potato nachos without sweet potatoes!

Black Beans: I used black beans to top the nachos. Black beans add protein, fiber, and other nutrients to this recipe.

Peppers: I used red and yellow bell peppers to top the nachos. I also added jalapeno pepper slices for some extra spice.

Guacamole: I made fresh guacamole as a dip for the nachos. You will need an avocado, cilantro, onion, garlic, lime juice, salt, and pepper to make the guacamole.

Avocado Oil: I used avocado oil to air fry the sweet potato slices. I like using avocado oil for high temperature cooking and air frying due to its high smoke point.

How To Make These Sweet Potato Nachos:

  1. Thinly slice sweet potatoes using a mandolin slicer.
  2. Place the sweet potato slices in a large bowl. Add 2 tbsp avocado oil, salt and pepper to taste. Mix until all of the sweet potato slices are evenly coated.
  3. Air Fry the sweet potato chips at 390 degrees for about 15 minutes or until they form chips.
  4. While the sweet potatoes are air-frying, make the guacamole. Place one ripe avocado in a bowl. Combine with 1 tbsp chopped onion, 1 minced garlic clove, fresh cilantro, a squeeze of lime juice, and salt and pepper to taste.
  5. Thinly slice the bell peppers. Cut the jalapeno pepper into slices. Strain the black beans.
  6. Place the sweet potato chips on a large plate. Top with 1/2 cup black beans, bell pepper slices, jalapeno slices, and guacamole. Serve with hot sauce!

Ingredients
  

  • 2 Sweet Potatoes medium
  • 1/2 cup Black Beans
  • 1/2 Red Bell Pepper
  • 1/2 Yellow Bell Pepper
  • 1/2 Jalapeno Pepper
  • 1 Avocado
