Sweet Potato Nachos

I recently got a mandolin slicer and love it. It slices vegetables super thin, which is ideal for making chips. Lately, I’ve been making beet chips and sweet potato chips in my air fryer and they come out so good every time. I love making Sweet Potato Nachos and my new mandolin slicer was the perfect excuse to make them. This recipe is a great healthy alternative to nachos. These vegetarian nachos are rich in veggies and also gluten free. These nachos make the perfect, healthy Football Sunday snack or party snack.

What You’ll Need:

You can really top these vegetarian nachos with any toppings you desire, but I will include the details of the ingredients that I used to make this recipe.

Sweet Potatoes: You, of course, can’t make sweet potato nachos without sweet potatoes!

Black Beans: I used black beans to top the nachos. Black beans add protein, fiber, and other nutrients to this recipe.

Peppers: I used red and yellow bell peppers to top the nachos. I also added jalapeno pepper slices for some extra spice.

Shredded Mexican Cheese: I used shredded Mexican cheese to top the nachos. The shredded cheese adds some more protein and fat to the nachos. Plus, who doesn’t love a cheese pull?

Guacamole: I made fresh guacamole as a dip for the nachos. You will need an avocado, cilantro, onion, garlic, lime juice, salt, and pepper to make the guacamole.

Oil Spray: I used avocado oil spray to air fry the sweet potato slices. I like using avocado oil for high temperature cooking and air frying due to its high smoke point.

How To Make These Vegetarian Nachos:

  1. Slice sweet potatoes into 1/8″ slices using a mandolin slicer.
  2. Lay the sweet potato slices flat in a single layer on an air fryer basket. Then, spray with oil spray and season with salt and pepper.
  3. Air Fry the sweet potato chips at 390 degrees for about 15 minutes (or until they form chips), flipping the chips halfway through. The chips may cook quicker if they are small so be sure to watch the chips to ensure that they don’t burn.
  4. While the sweet potatoes are air frying, thinly slice the bell peppers. Cut the jalapeno pepper into slices. Strain the black beans.
  5. Make the guacamole: Peel and remove the pit of one ripe avocado and place the avocado in a bowl. Combine with about one 1 tbsp chopped onion, 1 minced garlic clove, fresh cilantro, a squeeze of lime juice, and salt and pepper to taste.
  6. Place the sweet potato chips on a baking dish. Top with shredded Mexican cheese, black beans, bell pepper slices, and jalapeno slices and air fry for an additional 7 minutes or until the cheese melts and the chips are crispy.
  7. Remove the nachos from the air fryer and allow to cool for 5-10 minutes.
  8. Top with guacamole and serve with hot sauce!
