Bell Pepper Nachos

Looking for a healthier football Sunday snack? I’ve got you covered! These grain-free nachos contain extra veggies- bell peppers! You can top these bell pepper slices with whatever nacho toppings you desire. I share below the toppings that I used to make my bell pepper nachos, but you can use any toppings that you like. This low carb snack is gluten-free and packed with veggies. This recipe makes about 2 servings of nachos.

What You’ll Need:

Bell Peppers: You will need fresh bell peppers, not frozen. I used a variety of different colored bell peppers, but you can use any color bell pepper that you like.

Ground Beef: I used grass-fed ground beef to make these nachos, but you can also substitute with black beans or ground turkey instead.

Taco Seasoning: You will need taco seasoning to season the ground beef. Some taco seasonings contain added sugar, so I try to purchase one that contains no added sugar.

Jalapeno: I added sliced jalapeno peppers for some extra spice.

Avocado: I topped the nachos with avocado slices. You could also top them with guacamole.

Mexican Cheese: I used shredded Mexican cheese to top the bell pepper nachos.

How to Make Bell Pepper Nachos

  1. Rinse and cut each bell pepper into about 4 slices per bell pepper. Remove the seeds. Place the sliced peppers onto a baking dish lined with parchment paper.
  2. In a pot, cook the ground beef and season with taco seasoning.
  3. Slice a jalapeno pepper and remove the seeds.
  4. Add the cooked ground beef on top of the bell pepper slices. Top the bell peppers with jalapeno slices and shredded Mexican cheese.
  5. Bake the nachos in the oven for 10 minutes at 350 degrees or until the cheese melts. While the bell peppers are baking, cut an avocado into cubes.
  6. Remove the bell pepper nachos from the oven and top with avocado slices.

Bell Pepper Nachos

Ingredients
  

  • 3 Bell Peppers red, yellow, orange
  • 8 oz Ground Beef
  • Taco Seasoning to taste
  • 1 Jalapeno pepper
  • 1 Avocado
  • Mexican Cheese to taste

Instructions
