Carrot Cake Smoothie Bowl

Carrot cake is one of my all time favorite flavors! Since I love smoothie bowls, I had to make a Carrot Cake Smoothie bowl recipe. I love this smoothie bowl because it tastes like a frozen treat, but is packed with fruits and veggies.

Why I Love This Carrot Cake Smoothie Bowl:

  • It takes less than 5 minutes to make
  • It’s packed with fruits and vegetables
  • It contains no added sugar

Ingredients:

Banana: Frozen banana is a key ingredient in this recipe. I recommend freezing the banana instead of using a raw banana. Frozen banana will gives the smoothie a texture and taste similar to ice cream.

Carrot: You can’t have a carrot cake smoothie, without carrot! I recommend slicing the carrot thinly using a vegetable peeler prior to blending. This will help the carrot blend evenly in the smoothie mixture.

Frozen Riced Cauliflower: This is one of my favorite additions to smoothies. The frozen riced cauliflower adds bulk to the smoothie and gives it a creamy texture, without adding flavor.

Shredded Coconut: You will need a handful of shredded coconut to make this recipe.

Dates: Dates taste so naturally sweet and give this recipe an extra bit of sweetness. Make sure to remove the pits from the dates prior to blending.

Almond Milk: Use store bought or make your own almond milk. You can substitute the almond milk with any unsweetened milk of your choice.

Spices: Cinnamon and nutmeg are used to add some sweet flavors and really make this smoothie bowl taste like a treat!

How to Make Carrot Cake Smoothie:

  1. Using a vegetable peeler, remove the outside of the carrot and discard.
  2. Peel the rest of the carrot using a vegetable peeler. This cuts the carrots into thin ribbons and helps the carrot blend in the smoothie better.
  3. Place all ingredients in a blender and blend until smooth. Place the smoothie in a bowl and top with toppings.

Equipment

  • Blender

Ingredients
  

  • 1 Frozen Banana
  • 1 Carrot medium
  • 1/2 cup Frozen Riced Cauliflower
  • handful Shredded Coconut
  • 2 Dates
  • Cinnamon, Nutmeg to taste
  • 1 1/2 cups Almond Milk unsweetened
  • Shredded Carrot and Coconut Flakes optional toppings
