Ice cream is my all time favorite type of dessert. This Mint Chocolate Chip Nice Cream is a healthier alternative to ice cream that primarily consists of frozen bananas. It makes the perfect, nutritious summer dessert!

This Mint Chocolate Chip Nice Cream is made with just a few, simple ingredients and is very easy to prepare. This recipe is gluten-free and can be made dairy-free.

What You’ll Need to Make the Mint Chocolate Chip Nice Cream:

Frozen Bananas: Frozen bananas are the key to making nice cream. Blended frozen bananas taste similar to ice cream and are so delicious! I wait until the bananas are ripe, which is when they taste the sweetest, to freeze them.

Fresh Mint Leaves: Fresh mint leaves give this nice cream a fresh, mint flavor.

Chocolate Chips: You can use any kind of chocolate chips that you like in this recipe. Be sure to choose dairy-free chocolate chips if you need to make this recipe dairy-free.

Salt: You will need a pinch of salt for this recipe.

Directions:

  1. Place 3 frozen bananas, a handful of fresh mint leaves, and a pinch of salt in a blender. Blend until the ingredients have fully mixed and form a soft, frozen yogurt-like texture.
  2. Add the chocolate chips to the blender and pulse for a few seconds to slightly blend the chocolate chips.
  3. To keep the soft, frozen yogurt-like texture, immediately enjoy the nice cream after blending. To make a harder, ice cream-like texture, place the mixture in a bread pan lined with parchment paper. Push the mixture down with a spoon so that it covers the entire bottom of the bread pan. Place in the freezer for 1 to 1.5 hours. Note: Do no place the nice cream in the freezer for more than 1.5 hours or it will get too hard and need to be re-blended.
  4. Remove the mixture from the freezer. Using an ice cream scooper, scoop the nice cream into a bowl. It should have a consistency similar to ice cream.

NOTES: Enjoy the nice cream immediately. If you have leftovers, place them in the freezer. The texture will be too hard to consume if you freeze it for more than 1.5 hours. If you freeze the nice cream for more than 1.5 hours, place it in the blender and re-blend it to soften the texture when you are ready to consume. Then, repeat steps 3 and 4.
