No Bake Brownies

I have recently started making my own almond milk. When you make almond milk, the pulp from the almonds is leftover in the process. I have been experimenting with different ways to use the leftover almond pulp in order to reduce food waste. To be honest, it took me a few tries to figure out how to use it, but I finally got it down. I originally created this healthy no bake brownie recipe as a way to repurpose leftover almond pulp. However, if you do not have almond pulp, no problem. Almond flour works just as well in this recipe. These brownies are raw, vegan, gluten free, and so easy to make!

What You’ll Need:

Almond Pulp or Almond Flour: You can use the leftover almond pulp from making almond milk. If you don’t have almond pulp, almond flour works just as well.

Peanut Butter: You will need peanut butter to make this recipe. You can also substitute the peanut butter with sunflower butter. Try to use a nut or seed butter with no added sugar or oils if possible.

Cacao Powder: Cacao powder gives the brownies a chocolate flavor. However, it tastes bitter by itself so the dates are needed to balance out the flavor.

Coconut Flour: You will need a small amount of coconut flour in this recipe.

Dates: This recipe is naturally sweetened by dates and contains no added sugar. Soaking the dates overnight helps them blend easier.

Filtered Water: Water helps the ingredients blend together into “brownies.”

How to Make No Bake Brownies:


1. Add the almond pulp (or almond flour), peanut butter, cacao powder, dates, coconut flour and 2 tbsp filtered water to a food processor. Mix until the mixture reaches an even consistency and begins to stick together. You will repeatedly need to scoop the sides of the food processor throughout the process. If the mixture is too dry and not sticking together, add an additional 2 tbsp filtered water (for a total of 1/4 cup water) and blend again.

2. Transfer the mixture to a bread pan lined with parchment paper. Press the mixture evenly into the pan until it has flattened. (Optional: Top with chopped walnuts or pecans). Refrigerate for about 30 minutes.

3. Remove from the refrigerator and cut into approximately 8 brownies.

No Bake Brownies

These No Bake Brownies are so easy to make. All you need to do is blend ingredients and let them sit in the fridge!

Servings 8 brownies

Equipment

  • Food Processor
  • Bread Pan

Ingredients
  

  • 1 cup Almond Pulp
  • 1/4 cup Peanut Butter
  • 2 tbsp Cacao Powder
  • 2 tbsp Coconut Flour
  • 4 Dates
  • 2 tbsp Filtered Water
  • 1/4 cup chopped walnuts or pecans optional

Instructions
 

  • Add the almond pulp (or almond flour), peanut butter, cacao powder, dates, coconut flour and 2 tbsp filtered water to a food processor.
