Vegan Pistachio Pesto

If you follow me on instagram, you know that I LOVE Trader Joe’s cauliflower gnocchi. It is gluten free, dairy free, and made with just five, simple ingredients- cauliflower, cassava flour, potato starch, olive oil, and salt. It also tastes great. I think that it tastes like actual gnocchi. The cauliflower gnocchi comes frozen, so I always keep a bag stocked in my freezer. It is one of my go- to easy dinners because it’s so easy to make! All you need to do is cook the gnocchi on a skillet for a few minutes until crispy. Then, top the gnocchi with the sauce of your choice.
