Egg Muffins

These Egg Muffins make the perfect healthy snack or breakfast on the go!

Equipment

  • Muffin Tin

Ingredients
  

  • 1 cup Spinach
  • 1/4 cup Bell Peppers chopped
  • 2 tbsp Onion chopped
  • 1/4 cup Broccoli chopped
  • 12 Eggs
  • 1/4 cup Shredded Cheese optional
  • Salt to taste
  • Pepper to taste
  • Oil Spray

Instructions
 

  • Chop the vegetables into small pieces.
  • In a large bowl, whisk the eggs together. Season with salt and pepper.
  • Spray a muffin tin with oil spray.
  • Using a ladle, distribute the egg mixture evenly across 12 muffin tins.
  • Evenly distribute the chopped veggies across the 12 muffins tins.
  • Optional: top each muffin tin with shredded cheese.
  •  Bake at 375 degrees for 15-20 minutes.

Notes

These are the veggies that I used, but you can use any veggies that you have to make these muffins!
