Fresh Gazpacho

This Gazpacho recipe is so refreshing! It is made with all real food ingredients and is gluten free, vegan, paleo, and whole30.

Servings 1 bowl


  • Blender


  • 3 Tomatoes
  • 4 stalks Celery
  • 5 slices Cucumber
  • 1/2 Red Bell Pepper
  • 2 tbsp Red Onion sliced
  • 1 Garlic Clove
  • 2 Dates
  • 1/2 Lemon juiced
  • Fresh Dill to taste


  • Add all ingredients to a blender and blend until all ingredients are thoroughly mixed.
  • Allow to sit in the refrigerator for at least one hour to let all of the flavors come together – so worth it but also so hard to wait! 
  • Enjoy with crackers of your choice!
