Vegan Pistachio Pesto

If you follow me on instagram, you know that I LOVE Trader Joe’s cauliflower gnocchi. It is gluten free, dairy free, and made with just five, simple ingredients- cauliflower, cassava flour, potato starch, olive oil, and salt. It also tastes great. I think that it tastes like actual gnocchi. The cauliflower gnocchi comes frozen, so I always keep a bag stocked in my freezer. It is one of my go- to easy dinners because it’s so easy to make! All you need to do is cook the gnocchi on a skillet for a few minutes until crispy. Then, top the gnocchi with the sauce of your choice.

Today, I chose to top the gnocchi with a pistachio pesto sauce. I have had a bag of pistachios in my pantry for awhile and wasn’t sure what to do with it. I am trying to be more conscious of food waste so I decided to use the pistachios to make a pesto. The pesto turned out very tasty and was super easy to make. This pesto recipe is dairy free as the nutritional yeast gives it a cheesy flavor.

What You’ll Need to Make the Vegan Pistachio Pesto:

  • 1/4 cup raw pistachios
  • 1 cup firmly packed basil
  • 2 cloves garlic
  • 1 tbsp nutritional yeast
  • Juice of 1/2 lemon
  • 1 tbsp olive oil
  • 1/4 cup filtered water
  • Salt and pepper to taste

How to Make Pistachio Pesto:

Blend all ingredients in a food processor, continually scooping down the sides throughout the blending process.
