Are you a sweet potato or a regular potato person? I personally love sweet potatoes! You can make them savory, you can make them sweet – they are such a delicious add to meals!
My favorite type of pasta is gnocchi but I don’t eat regular gnocchi too often because I generally avoid gluten. I’ve found Trader Joe’s cauliflower gnocchi to be a great substitute; however, I personally like making foods from scratch as often as possible in order to control what ingredients and how much of each ingredient are put into my food.
I’ve made this sweet potato gnocchi a few times now and it is great! It’s a lot easier to make than you would think. This recipe is both gluten free and vegan. The key ingredient in this recipe is Cassava flour.

This may be the easiest recipe I have ever made! It doesn’t involve many ingredients, only took me about 20 minutes to make, and is naturally delicious. This recipe is gluten-free and vegan. It makes about 10 falafel.
I topped the falafel over a salad bowl with tahini sauce. You could also throw them in a pita. See recipe below!

Have you ever cooked jackfruit before? Have you ever heard of jackfruit before?
I had only recently heard of jackfruit. I made it for lunch for the first time roasted in bbq sauce and it was so good, I felt the need to spread the news! Jackfruit, as the name implies is a fruit. However, if you chop it up and roast it in BBQ sauce, it actually tastes like pulled meat! It also resembles pulled meat. BBQ Jackfruit is so easy to make and is the perfect add to tacos, taco bowls, or to any bbq!
BBQ Jackfruit is the perfect compliment to any plant based recipe. I love that this meat alternative, is simply a fruit! So many meat alternatives are highly processed, high in sodium, and just don’t seem great for you! I love that jackfruit is completely natural and only 1 ingredient! I am a firm believer in eating real food so bbq jackfruit is a food that I can easily get on board with!
For this recipe, I used canned jackfruit that I found at Trader Joes. I put added the bbq jackfruit to a taco bowl to create a healthy and delicious, plant based Mexican meal.

I had this lentil bolognese on spaghetti squash for dinner last night. I’m definitely on a kick with all of the fall seasonal foods, but especially spaghetti squash. Spaghetti squash is so easy to make and I love subbing it for traditional pasta. I like topping my spaghetti squash with this lentil bolognese sauce. It tastes delicious and makes the perfect healthy comfort food!
This is gluten free, dairy free, added sugar free, and vegan/vegetarian.
