Shrimp with Mango Avocado Salsa

As the weather gets warmer and we approach summer, I love fresh, hydrating recipes. This shrimp bowl is one of my favorites! It is so simple and delicious and tastes so refreshing.

The shrimp is cooked to have a honey- garlic flavor. The fruit salsa it is paired with is a mango-avocado salsa. You can substitute the mango for 1 cup cubed pineapple as well and it tastes equally delicious. The recipe is topped with a fresh squeeze of lime juice.

Cauliflower Pizza Crust

Pizza is hands down one of my favorite foods. A few years ago, I began dabbling with making cauliflower pizza crusts. The biggest issues that I found was that the crusts didn’t stick together or primarily consisted of cheese. I wanted to make a cauliflower pizza crust that 1) actually stayed together, 2) was made with simple, wholesome ingredients, and 3) was dairy free/paleo friendly.

This cauliflower pizza crust is only made with four ingredients and is gluten free, dairy free, and paleo! This crust is very simple and tastes plain, similar to how a regular pizza crust would also taste plain by itself. I like to think of the crust as the canvas and and the toppings are like the paint.

Blueberry Basil Smoothie

I picked up basil from the grocery store the other week and they only had the basil plant. I decided to pot it in an old, glass peanut butter jar, thinking that it wouldn’t last long in my windowsill. I have tried to grow basil plants multiple times in my windowsill, but every time have been unsuccessful. Maybe because it’s quarantine and I’m home and my basil plant is getting the TLC it needs, but it is thriving in my windowsill! Now, I’m going to have to think about re-potting it in an actual pot..

My new basil plant as well as the warmer weather inspired me to make this Blueberry Basil smoothie. This recipe is gluten free, vegan, paleo, and whole 30. It only requires 4 ingredients to make!

No Bake Samoa Cookies

It’s about that time of year for Girl Scout Cookies. I love Girl Scout Cookies and my all time favorite flavor is Samoa. I love the coconut/caramel/chocolate flavor combo and the cookie layer adds the perfect amount of crunch. Clearly, I love samoas. However, instead of buying girl scout cookies this year, I decided to make my own healthier version.

Low Sugar Chocolate Almond Butter Bars

I have a few guy friends who have found a lot of success on the keto diet and were able to lose a decent amount of weight. I’m overall neutral when it comes to the keto diet. I’m not a proponent of the keto diet, or against it. I enjoy eating fruit (as you can see by my frequent smoothie bowl posts), so I don’t think it would be a sustainable or satisfying diet for me. However, after hearing friends’ success stories on the keto diet, I am now curious.

Dessert Dates

If you haven’t noticed, I’m a huge fan of dates. They taste so sweet and delicious all by themselves. I like to use dates as sweeteners in recipes instead of any form of added sugar. Unlike straight sweetener such as cane sugar, coconut sugar, maple syrup or even honey, dates are sweet but contain fiber. Fiber is the indigestible are of food that are associated with several potential health benefits. Fiber also helps keep you feeling full and satisfied.

These stuffed dates are my favorite little dessert pieces. They take about 10 seconds to make and offer the perfect amount of sweetness after a meal. After dinner, I always crave something sweet, but I don’t typically have a lot of sweets around. These desserts are perfect to satisfy this sweet craving because they can be assembled quickly and provide just the right amount of sweetness.
