During this COVID 19 quarantine, many of us may find that we are at home cooking much more than usual. If this is not something that you are used to doing, it may be a challenge to navigate what groceries to purchase at the grocery store. Chocolate Chip Tahini Balls

Coming at you with another recipe to repurpose almond pulp! If you are unfamiliar, almond pulp is what is leftover part of the almond when you make your own almond milk. If you haven’t yet seen it, check out my  previous post on how to make almond milk.  Making your own almond milk is very simple, avoids the use of thickeners and preservatives found in store bought almond milk, and tastes delicious! It also reduces waste by not purchasing store bought almond milk in single-use containers.

Repurposing almond pulp reduces food waste by using all of the almond when making almond milk. When I first started making my own almond milk, I had no idea what to do with the leftover almond pulp. Now that I’ve been making almond milk for some time, I’ve found several easy, delicious, and healthy ways to repurpose nut pulp! For more idea, check out my tab of nut pulp recipes.

Sweet Potato Black Bean Burgers

I love veggie burgers. They are so delicious and versatile. You can eat them on a bun with some sweet potato fries or throw them into a salad bowl. However, many of the veggie burgers sold at the grocery store are highly processed. I love making these Sweet Potato Black Bean Burgers because they are nutritious, delicious, and exactly what they should be – made of veggies!

Vegan Pistachio Pesto

If you follow my Instagram account (@wellbymel_), you know that I LOVE Trader Joe’s cauliflower gnocchi. It is gluten free, dairy free, and only made with 5 ingredients- cauliflower, cassava flour, potato starch, olive oil, and salt! And it tastes great- it tastes like actual gnocchi! This is one of my go- to easy dinners because it is frozen and so easy to make! All you need to do is cook it on a skillet for a few minutes until fully thawed and crispy and then top with the sauce of your choice. Note: do not follow the package instructions to cook the gnocchi or else they will turn out mushy.

Today, I chose a pistachio pesto sauce. I have had a bag of pistachios in my pantry for a few months and wasn’t sure what to do with them. I’m trying to be more conscious of food waste so I decided to re-purpose them to make pesto. It was super yummy and really easy! This pesto is dairy free and uses nutritional yeast for a cheesy flavor. See full recipe below!

Pineapple Overnight Oats

Introducing you to my all time favorite warm weather oatmeal combo- Pineapple Overnight Oats! I know this combo sounds kind of weird, but it seriously tastes so good. The overnight oats are served cold and combined with the pineapple tastes so refreshing and delicious! These overnight oats are so easy to make- all you do is combine ingredients, let it sit overnight, and then enjoy the next morning! As much as I like oatmeal, who wants to eat warm oats over the summer? Not me. Plus it make it that much easier to make!

These Pineapple Overnight Oats are mixed with nut milk and of course fresh cut pineapple for a sweet and delicious flavor. It also contains both chia seeds and flax seeds for a dose of healthy fat and fiber. This combination helps keep you feeling full and satisfied for longer. It is sweetened with coconut nectar. Coconut nectar is a similar color and consistency of maple syrup, but tastes slightly different- it is delicious! I topped the overnight oats with goji berries for added crunch (optional).
