I made my Gluten Free, Added Sugar Free Pumpkin Bread a little bit differently this week. It is a very similar recipe, but has a lite spin on it. As usual, it is made with real food ingredients And let me tell you it is GOOD! This recipe makes 1 loaf, which I typically cut into 6 slices. The best part is, it is LESS THAN 200 CALORIES PER SLICE (1 slice = 1/6 loaf). That is correct! It is less calories than those bars most people are snacking on and waayyyy more delicious. I have a few guy friends who have found a lot of success on the keto diet and were able to lose a decent amount of weight. I’m overall neutral when it comes to the keto diet. I’m not a proponent of the keto diet, or against it. I enjoy eating fruit (as you can see by my frequent smoothie bowl posts), so I don’t think it would be a sustainable or satisfying diet for me. However, after hearing friends’ success stories on the keto diet, I am now curious.
So what does this mean?

Coming at you with another recipe to repurpose almond pulp! If you are unfamiliar, almond pulp is what is leftover part of the almond when you make your own almond milk. If you haven’t yet seen it, check out my previous post on how to make almond milk. Making your own almond milk is very simple, avoids the use of thickeners and preservatives found in store bought almond milk, and tastes delicious! It also reduces waste by not purchasing store bought almond milk in single-use containers.
Repurposing almond pulp reduces food waste by using all of the almond when making almond milk. When I first started making my own almond milk, I had no idea what to do with the leftover almond pulp.
