I had only recently heard of jackfruit. I made it for lunch for the first time roasted in bbq sauce and it was so good, I felt the need to spread the news! Jackfruit, as the name implies is a fruit. However, if you chop it up and roast it in BBQ sauce, it actually tastes like pulled meat! It also resembles pulled meat. BBQ Jackfruit is so easy to make and is the perfect add to tacos, taco bowls, or to any bbq!
BBQ Jackfruit is the perfect compliment to any plant based recipe. I love that this meat alternative, is simply a fruit! So many meat alternatives are highly processed, high in sodium, and just don’t seem great for you! I love that jackfruit is completely natural and only 1 ingredient! I am a firm believer in eating real food so bbq jackfruit is a food that I can easily get on board with!
For this recipe, I used canned jackfruit that I found at Trader Joes. I put added the bbq jackfruit to a taco bowl to create a healthy and delicious, plant based Mexican meal.
Starting off Friday morning with this tart beet berry smoothie bowl on my couch in nyc. I’m obsessed with the color of this smoothie and the tart beet berry combo is one of my favs. Super excited to go see a functional medicine doctor for a routine visit (said no one ever, right?!) Happy Friday!! One of my favorite carrot turmeric smoothie bowls pictured here 🥕🥕🥕 Woke up early this morning and tried a Yoga Sculpt class and loved it! I don’t personally do yoga, but am trying to incorporate it into my weekly routine because I keep hearing of all its awesome benefits. I went to the studio this morning to sign up for class and they asked me if I wanted to do a regular vinyasa or a yoga sculpt (aka cardio + weights). I went for the yoga sculpt because that is so much more up my alley. I’m not sure what happened- we did burpees and squats and yoga and it was so much fun. I’ve never been to a yoga class like that and it put me in sucha good mood. Hope everyone’s Friday is off to a great start!

Threw together the leftovers from my kitchen and came out with these carrot cake muffins! They are vegan, gluten free, have no added sugar and are awesome! Definitely going to try making these before my next flight ✈️ to pack as breakfast. They were too easy to make.
I use a bamboo cutting board from Thrive Market to prep my veggies because plastics interacting with your food is a thing!
