Shrimp with Mango Avocado Salsa

As the weather gets warmer and we approach summer, I love fresh, hydrating recipes. This shrimp bowl is one of my favorites! It is so simple and delicious and tastes so refreshing.

The shrimp is cooked to have a honey- garlic flavor. The fruit salsa it is paired with is a mango-avocado salsa. You can substitute the mango for 1 cup cubed pineapple as well and it tastes equally delicious. The recipe is topped with a fresh squeeze of lime juice.

Cauliflower Pizza Crust

Pizza is hands down one of my favorite foods. A few years ago, I began dabbling with making cauliflower pizza crusts. The biggest issues that I found was that the crusts didn’t stick together or primarily consisted of cheese. I wanted to make a cauliflower pizza crust that 1) actually stayed together, 2) was made with simple, wholesome ingredients, and 3) was dairy free/paleo friendly.

This cauliflower pizza crust is only made with four ingredients and is gluten free, dairy free, and paleo! This crust is very simple and tastes plain, similar to how a regular pizza crust would also taste plain by itself. I like to think of the crust as the canvas and and the toppings are like the paint.

Blueberry Basil Smoothie

I picked up basil from the grocery store the other week and they only had the basil plant. I decided to pot it in an old, glass peanut butter jar, thinking that it wouldn’t last long in my windowsill. I have tried to grow basil plants multiple times in my windowsill, but every time have been unsuccessful. Maybe because it’s quarantine and I’m home and my basil plant is getting the TLC it needs, but it is thriving in my windowsill! Now, I’m going to have to think about re-potting it in an actual pot..

My new basil plant as well as the warmer weather inspired me to make this Blueberry Basil smoothie. This recipe is gluten free, vegan, paleo, and whole 30. It only requires 4 ingredients to make!

Black Bean Brownies

I have been making these lentil meatballs for years and it is hands down one of my favorite recipes. It is a plant-based take on a comfort food. It may be a little early, but I’m so excited to repost my Carrot Cake Muffins recipe! These Carrot Cake Muffins are my favorite spring treat. Like all of my dessert recipes, they are also super easy to make! All you need to do is blend the ingredients (I used my Vitamix blender), place into muffin tins, and bake for 15 minutes. Allow them to cool, and top with the coconut cream topping, which only requires you to blend 2 ingredients to make.
