I’m not gonna lie, I had seen Black Bean Brownies before and was a bit skeptical about how they’d taste. Since it’s quarantine time due to COVID-19 in NYC and I have some extra cans of black beans, I decided to give it a try. I was honestly so surprised how easy it was to put this recipe together and how much the batter tastes like brownies! Only this recipe is gluten free, vegan, contains no refined sugar, is rich in fiber, and made with real food ingredients!

Lentil Meatballs

I have been making these lentil meatballs for years and it is hands down one of my favorite recipes. It is a plant-based take on a comfort food. They make the perfect cozy recipe, but are loaded with veggies and legumes. I like topping the lentil meatballs over spaghetti squash or some zucchini zoodles with nutritional yeast.

Carrot Cake Muffins

It may be a little early, but I’m so excited to repost my Carrot Cake Muffins recipe! These Carrot Cake Muffins are my favorite spring treat. Like all of my dessert recipes, they are also super easy to make! All you need to do is blend the ingredients (I used my Vitamix blender), place into muffin tins, and bake for 15 minutes. Allow them to cool, and top with the coconut cream topping, which only requires you to blend 2 ingredients to make.

Apple Cinnamon Scones

Caramelized apples are one of my favorite healthy treats. By caramelized apples, I mean apple slices that are sautéed in cinnamon and coconut oil. They get so fragrant and taste incredible! Apple Cinnamon is one of my all time favorite combos.

I wanted to make a healthy apple cinnamon flavored breakfast recipe and came up with these scones. They are gluten free, vegan, and contain no added sugar. They are very easy to make and make the perfect breakfast on the go.

Low Sugar Chocolate Almond Butter Bars

I have a few guy friends who have found a lot of success on the keto diet and were able to lose a decent amount of weight. I’m overall neutral when it comes to the keto diet. I’m not a proponent of the keto diet, or against it. I enjoy eating fruit (as you can see by my frequent smoothie bowl posts), so I don’t think it would be a sustainable or satisfying diet for me. However, after hearing friends’ success stories on the keto diet, I am now curious.

Dessert Dates

If you haven’t noticed, I’m a huge fan of dates. They taste so sweet and delicious all by themselves. I like to use dates as sweeteners in recipes instead of any form of added sugar. Unlike straight sweetener such as cane sugar, coconut sugar, maple syrup or even honey, dates are sweet but contain fiber. Fiber is the indigestible are of food that are associated with several potential health benefits. Fiber also helps keep you feeling full and satisfied.

These stuffed dates are my favorite little dessert pieces. They take about 10 seconds to make and offer the perfect amount of sweetness after a meal. After dinner, I always crave something sweet, but I don’t typically have a lot of sweets around. These desserts are perfect to satisfy this sweet craving because they can be assembled quickly and provide just the right amount of sweetness.

✨Healthy Oatmeal Raisin Cookies✨ Fun Fact: when I was younger oatmeal raisin were my favorite cookies, but none of the other kids ever liked them because they were “healthy” cookies.
