Pina Colada Smoothie Bowl

During the summer, I crave all of the fresh, hydrating fruits. One of my favorite is pineapple.  Pineapple are full of nutrients, contain antioxidants, and help fight inflammation. They are also so incredibly delicious.

If you’ve been following my blog for some time, you know that one my go-to breakfasts is a smoothie bowl. Unlike most smoothie stores you see that market themselves as healthy but are actually the equivalent of froyo, my smoothie bowls are full of fruits and veggies and largely gluten-free and dairy-free. I love making smoothies for a few reasons. 1) It is a breakfast you can make it literally less than 3 minutes. 2) It is made with primarily frozen or other naturally shelf stable products such as nut butter so it is easy to have these ingredients on hand because they do not expire quickly. 3) They taste AMAZING! Literally like you are eating dessert, except they are packed with fruits veggies, healthy fats, and proteins. It is such an easy way to sneak in a ton of veggies.

In the spirit of summer, I was inspired to make a Pina Colada Smoothie Bowl. This smoothie is literally made with 4 ingredients. You read that right, ONLY 4 INGREDIENTS!

Pineapple Overnight Oats

Introducing you to my all time favorite warm weather oatmeal combo- Pineapple Overnight Oats! I know this combo sounds kind of weird, but it seriously tastes so good. The overnight oats are served cold and combined with the pineapple tastes so refreshing and delicious! These overnight oats are so easy to make- all you do is combine ingredients, let it sit overnight, and then enjoy the next morning! As much as I like oatmeal, who wants to eat warm oats over the summer? Not me. Plus it make it that much easier to make!

These Pineapple Overnight Oats are mixed with nut milk and of course fresh cut pineapple for a sweet and delicious flavor. It also contains both chia seeds and flax seeds for a dose of healthy fat and fiber. This combination helps keep you feeling full and satisfied for longer. It is sweetened with coconut nectar. Coconut nectar is a similar color and consistency of maple syrup, but tastes slightly different- it is delicious! I topped the overnight oats with goji berries for added crunch (optional).

Green Goddess Smoothie

This is by far my favorite summer smoothie! It was actually the first smoothie combo that I have ever made. It’s a fun green color and tastes super refreshing. The green color comes both from spinach and wheatgrass. I love wheatgrass! It is the first superfood that I ever tried. It has a grassy taste that isn’t too strong so its an easy add to any smoothie. Wheatgrass is high in nutrients and antioxidants and can help reduce inflammation. However, wheatgrass is the leaves of the wheat plant and can contain gluten depending on how it is harvested. It may be best to avoid wheatgrass if you are gluten-free.

Note: This recipe is labeled as vegan, but is topped with bee pollen (optional). If you are trying to follow a vegan diet, you may want to skip the bee pollen topping.

Berry Beet Smoothie Bowl

I love the beet berry smoothie combo. It is the perfect level of sweetness and the avocado makes it taste so creamy and incredible. I’m not kidding when I say that I made this smoothie combo nearly everyday for a couple of weeks this winter. Yes, I eat smoothie bowls all through the winter. They are that good.

I recently came across Trader Joe’s frozen beet chunks and am so glad that I discovered them! I love making beet berry smoothies and these frozen beet chunks make it so much easier. These beets are already peeled, cut, frozen, and ready to be tossed into a smoothie! Definitely an easier alternative than preparing your own frozen beets.

This smoothie recipe tastes like a frozen treat, but is primarily made of fruit, veggies, and healthy fat. This smoothie is so creamy and delicious and contains healthy and fiber-rich ingredients and healthy fat that will keep you feeling full and satisfied for longer.
