Sweet Potatoes, Black Beans, & Avocado

As I said in my recent post, My One Week Food Stamps Experience Project, I am adding budget-friendly recipes to my page. This Sweet Potatoes, Black Beans, & Avocado recipe is my second budget-friendly recipe. You can find all of my budget-friendly recipes here. This meal is balanced with protein, healthy fat, and fiber. It is both nutrient-dense and satiating. I personally love this recipe because it’s super easy to make and tastes delicious!

What You Will Need:

  • Oven
  • Baking Dish/Sheet
  • Cutting Board
  • Colander
  • Knife
  • Plate
  • Fork

Ingredients:

  • 2/3 of a 16oz can black beans
  • 2 medium sweet potatoes
  • 1 avocado
  • Oil
  • Spices such as salt, pepper, paprika, chipotle, cayenne pepper

Directions:

  1. Cut the sweet potatoes into cubes. Place the cubed sweet potatoes on the baking sheet and top with oil and any desired spices. Cook the potatoes on 400 degrees for about 30 minutes or until the potatoes have softened.
  2. Open can of black beans and place in colander. Rinse the beans and allow to dry.
  3. Cut an avocado in half, remove the pit and peel, slice avocado into cubes.
  4. Mix the cooked sweet potatoes, black beans, and avocado in a bowl.

  • 10 oz Black Beans
  • 2 Medium Sweet Potatoes
  • 1 Avocado
  • Oil

Instructions
 

  • Cut the sweet potatoes into cubes. Place the cubed sweet potatoes on the baking sheet and top with oil and any desired spices. Cook the potatoes on 400 degrees for about 30 minutes or until the potatoes have softened.
