Sweet Potato Black Bean Burgers

I love veggie burgers. They are so delicious and versatile. You can eat them on a bun with some sweet potato fries or throw them into a salad bowl. These gluten-free black bean burgers are made with wholesome ingredients and taste delicious!

The sweet potato black bean burgers have more of a Mexican flavor. You can pair them with guacamole, hot sauce, or even bbq sauce. These veggie burgers are made with primarily veggies and gluten-free oats are used to help the burgers bind and stick together. This recipe contains a variety of spices, which give the veggie burgers their spicy flavor. These gluten-free black bean burgers are vegan-friendly. This recipe makes about six veggie patties.

For this recipe, I recommend using a food processor or blender with vertical blades. The veggie burger ingredients will not blend as well in a Vitamix blender, which only contains blades at the bottom of the blender.

What You’ll Need:

Black Beans: You, of course, can’t make sweet potato black bean burgers without black beans! Black beans are packed with protein and fiber, containing about 15 grams of protein and fiber per cup (1). I love black beans because they are a more affordable protein and last in the pantry for a long time.

Sweet Potato: You, of course, can’t make sweet potato black bean burgers without sweet potatoes! Sweet potatoes are packed with vitamins, minerals, and fiber.

Other Veggies: This recipe includes bell pepper, onion, and garlic. They add extra veggies and added flavor to the veggie burgers.

Rolled Oats: Rolled oats help to form the veggies into burgers. If you need to be gluten-free, be sure to use gluten-free rolled oats.

Chia Seeds: Chia seeds are a very nutrient-dense food. They contain calcium, iron, and magnesium. Chia seeds are also a source of protein, omega 3 fatty acids, and high in fiber (2).

Filtered Water: Filtered water and chia seeds combine to form a chia egg. The chia egg helps the veggie burgers bind and stay together.

Herbs and Spices: Cilantro, chipotle powder, paprika, cayenne pepper, salt, and pepper spices make these veggie burgers a little spicy and so flavorful.

How to Make Sweet Potato Black Bean Burgers:

1. Slice a hole in the sweet potato and heat in the microwave for ~ 5 minutes or until softened. Set aside to cool.

2. Place black beans in a strainer and rinse thoroughly. Set to the side to dry.

3. Slice the bell pepper into smaller pieces.

4. Place 3 tbsp water and chia seeds in a bowl off to the side. The chia seeds will gelatinize, forming a “chia egg.”

5. Once the sweet potato is cooled, remove the skin. Add all ingredients except for the rolled oats and “chia egg” to a food processor. Pulse mixture for several seconds to mix. You will need to scrap the sides of the food processor several times throughout the process. Blend until the ingredients have mixed together, but it is not completely homogeneous. You want the mixture to be somewhat clumpy to help it form into patties.

6. Add the 1/4 cup rolled oats to the food processor. Pulse for a few seconds to disperse the oats throughout the mixture, but not fully blend.

7. Place the contents of the food processor into a bowl. Add the chia egg and the remaining 1/4 cup rolled oats. Mix the contents of the bowl. Form the mixture into veggie patties (it will make ~6).

8.  Cook veggie burgers on a baking dish over parchment paper at 375 degrees for ~20 minutes.
