Shrimp with Mango Avocado Salsa

As the weather gets warmer and we approach summer, I love fresh, hydrating recipes. This Shrimp With Mango Avocado Salsa is one of my favorites! It is so simple and delicious and tastes so refreshing.

I cook the shrimp with garlic and honey, top it over a mango and avocado salsa, and serve it cold. You can substitute the mango for cubed pineapple as well and it tastes equally delicious. I top the dish with a squeeze of lime juice.

This Shrimp With Mango Avocado Salsa is both gluten free and paleo. If you want to make it whole 30, skip the honey. This recipe makes about two servings.

What You’ll Need:

Shrimp: You will need about 1 1/4 lbs of shrimp.

Produce: I use a variety of produce, including mango, avocados, red onion, and the juice of a lime to make the avocado mango salsa.

Avocado Oil: I use avocado oil for high temperature cooking and air frying. I specifically use Chosen Foods avocado oil because based on a study that came out in June 2020, Chosen Foods was found to be one of the few brands of avocado oil that was pure avocado oil and not rancid1. Garlic: The shrimp are cooked in garlic for added flavor.

Honey: Honey adds the perfect amount of sweetness to the shrimp.

Directions:

  1. Devein and remove tails from shrimp.
  2. In a frying pan, add 1 tbsp avocado oil and 1 minced clove of garlic. Cook on medium heat for about 20 seconds.
  3. Add shrimp to the frying pan with the avocado oil and garlic. Saute the shrimp until the shrimp are cooked and turn pink.
  4. Add 1 tbsp of honey to the shrimp and mix. Turn off the heat and set the pan of shrimp to the side to allow to cool.
  5. Cut one mango and two avocados into cubes. Add to a separate bowl along with the chopped red onion.
  6. Once the shrimp have cooled, add them to the bowl. Squeeze the juice of 1/2 lime over the bowl and mix the contents of the bowl.

  • 1.25 lbs Raw Shrimp
  • 1 Ripe Mango
  • 2 Ripe Avocados
  • 1/4 cup Chopped Red Onion
  • 1/2 Lime juice
