Healthier Samoa Cookies

It’s about that time of year for Girl Scout Cookies. I love Girl Scout Cookies and my all time favorite flavor is samoa. I love the coconut/caramel/chocolate flavor combo and the cookie layer adds the perfect amount of crunch. Clearly, I love samoas. However, instead of buying girl scout cookies this year, I decided to make my own version of healthier samoa cookies.

These samoa cookies are no bake. They need to be placed in the freezer briefly to form and then can be stored in the refrigerator. They form very easily and hold shape very well. All you need is a blender or food processor and a muffin tin the make these samoas. I recommend using muffins liners as well to help with the removal of the samoas from the muffin tins.

Not only do these samoas taste like the real deal, but they are made with real food ingredients that help you feel satisfied. This recipe is gluten free and dairy free. The ingredients are very simple and are actually items that I regularly have in my pantry.

What You’ll Need:

Dairy Free Chocolate Chips: You will need to melt chocolate for this recipe. I like using healthier chocolate brands such as Evolve Life or Hu Kitchen Chocolate. Use my affiliate link to get 15% off Hu Kitchen.

Walnuts: Walnuts are used to make they cookie layer. They are a healthy fat and add the perfect amount of crunch to the cookie layer of the samoa cookies.

Coconut Flakes: You can’t make samoas without coconut! I used dried coconut flakes in this recipe.

Dates: I used fresh dates in this recipe. Soak them beforehand to help them blend easier. The dates combine with the walnuts and coconut and give the samoa cookie a caramel taste.

Maple Syrup: A little bit of maple syrup is used for some added sweetness.

How to Make Healthier Samoa Cookies:

  1. Soak the five dates in a bowl of water for about an hour.
  2. Melt 3/4 cups of chocolate chips in the microwave. Microwave them for 30 seconds at a time so that the chocolate doesn’t burn. After every 30 seconds mix the chocolate and continue microwaving until the chocolate chips are fully melted.
  3. Evenly distribute the chocolate across 8 muffin liners. Place the muffin liners in the freezer to set while you make the cookie layer.
  4. Remove dates from the bowl of water. To make the cookie layer, blend the walnuts, coconut flakes, dates, and maple syrup in a food processor. Blend until the mixture sticks together.
  5. Remove the muffin liners from the freezer and evenly distribute the cookie layer across the 8 muffin liners.
  6. Melt the remaining 1/4 cup of chocolate chips in the microwave, 30 seconds at a time. Once melted, add a small amount of chocolate to the top of every samoa cookie.
  7. Place in the freezer for about 30 minutes to set.
  8. Once the cookies are set, remove from muffin tins and store in the refrigerator.

  • 1 cup Chocolate Chips dairy free
  • 1/2 cup Walnuts
  • 1/2 cup Coconut Flakes

  • 1 tbsp Maple Syrup
