When the weather gets warmer, I crave all of the hydrating, fresh foods. I love this gazpacho dish because it’s super hydrating and refreshing – perfect for summer! I paired it with Sakara Life chia tortillas to dip. This recipe is made completely with real food ingredients and is raw, vegan, and gluten free. All you need is a blender to make!
Ingredients in Gazpacho:
- 3 tomatoes
- 4 stalks of celery
- 5 slices of cucumber
- 1/2 red bell pepper
- 2 tbsp sliced red onion
- 1 garlic clove
- 2 dates
- juice of 1/2 lemon
- optional: fresh dill
How to Make Gazpacho:
- Add all ingredients to a blender and blend until all ingredients are thoroughly mixed. Optional: Add dill to taste.
- Allow to sit in the refrigerator for at least one hour to let all of the flavors come together – so worth it but also so hard to wait! 😬💁♀️
- Enjoy with crackers of your choice!
