Chocolate Avocado Pancakes

Have you ever added avocado to your pancakes….? Let me tell you, it is a game changer! These Chocolate Avocado Pancakes taste so creamy and delicious and are packed with vitamins, minerals, and fiber. This recipe is both gluten free and dairy free.

Yes, you read that correctly. There is avocado in these pancakes. Similar to adding avocado to smoothies, the avocado makes these pancakes taste super rich and creamy and is the perfect compliment to the chocolate flavor. Plus avocados are full of healthy fats and fiber, which makes these pancakes a more satiating meal.

The base ingredient of these pancakes is gluten free oat flour. I love using oat flour to make pancakes. I find the consistency to be easy to work with and the most similar to regular flour in comparison to other types of alternative flours. I’ve tried to make pancakes with a variety of different types of alternative flours in the past and they have tended to fall apart, be sticky, or overall just not good. However, with oat flour I’ve been able to consistently get great pancake results.

What You’ll Need:

GF Oat Flour: You can purchase oat flour or make it yourself by blending together oats. If you chose to make your own oat flour, make sure you use rolled oats or quick oats. Steel cut oats need to be cooked on stove top and will not work. Opt for gluten-free oats if you need to make this recipe gluten-free.

Banana: A ripe banana is used to naturally sweeten this recipe and help hold the pancakes together.

Avocado: Avocado makes these pancakes taste so rich and creamy and also adds a boost of healthy fat, vitamins, minerals, and fiber to this recipe!

Almond Milk: I used almond milk for this recipe. You can use store bought almond milk or make your own almond milk. Whichever you choose, I recommend using an unsweetened nut milk.

Cacao Powder: Cacao powder adds the chocolate flavor to these pancakes. It tastes bitter by itself, so the sweetness from banana and maple syrup are needed to balance this flavor out.

Maple Syrup: Adds extra sweetness to this recipe.

Baking Soda: The baking soda helps the pancakes slightly rise, similar to pancakes made with regular flour.

Cinnamon: I love adding cinnamon for some added flavor and natural sweetness, but it is completely optional.

How To Make Chocolate Avocado Pancakes:

  1. Place oat flour and baking soda into a medium sized bowl.
  2. In a blender, combine banana, avocado, cacao powder, cinnamon, one tbsp maple syrup, and almond milk. Blend until smooth. Add another tbsp maple syrup and if desired.
  3. Add contents of the blender to the bowl and mix thoroughly.
  4. Grease pan with oil or butter of your choice. Cook pancakes on medium heat for ~2-3 minutes on each side, depending on the size of the pancake. If you are having trouble flipping the pancakes, try spraying the spatula with an oil spray. This will prevent the pancake batter from sticking to the spatula and make them easier to flip. This makes about 2 servings of pancakes.

Notes
