Cauliflower Nuggets

My air fryer is one of my favorite kitchen gadgets. I love my air fryer because you can do so much with it. It enables you to air fry foods which requires much less oil than traditional frying. Additionally, my Ninja air fryer has a roast, reheat, and dehydrate option. I love roasting veggies in my air fryer because it takes much less time than roasting in a pan or in the oven and requires no stirring! I probably use my air fryer at least once per day. I recently used my air fryer to make these Cauliflower Nuggets. This recipe is a vegetarian spin on chicken nuggets and can be made with just three ingredients.

In this recipe, I did not include any spices. I personally like to make the cauliflower nuggets plain and then dip them in the New Primal BBQ sauce or buffalo sauce. However, you can use any seasonings that you like in this recipe.

What You’ll Need:

Cauliflower: You, of course, can’t make cauliflower nuggets without cauliflower! You will need one head of fresh cauliflower for this recipe.

Egg Whites: You will need about 1 egg white to start. You do not need to purchase eggs whites, you can simply extract the egg white from the whole egg. If some of the yolk is mixed in, it’s not a big deal.

Almond Flour: You will need about 1/2 cup of almond flour to start. I recommend being flexible with the amount of almond flour because you may need to use more depending on how much sticks to the cauliflower and coats it.

How to Make Cauliflower Nuggets:

  1. Rinse head of cauliflower and cut into florets.
  2. Place egg whites in a bowl and place almond flour in a separate bowl.
  3. Dip each cauliflower floret in the egg whites and then coat with almond flour.
  4. Place cauliflower nuggets on parchment paper and air fry nuggets at 390 degrees for 15 minutes.
  5. Remove from air fryer and serve with buffalo sauce!
