Cauliflower Fried Rice

If you’re looking for an easy and nutritious meal that can be made in less than 10 minutes, then give this Cauliflower Fried Rice recipe a try! This is my go-to meal when I need something that’s quick and easy to make or when I’m running low on fresh produce. One of my favorite things about this recipe is that it’s made with mostly frozen ingredients.

What’s so great about frozen ingredients? Let me tell you…

1). Frozen produce doesn’t expire as quickly as fresh produce. 

This makes frozen produce really easy to keep stocked in the kitchen. Frozen produce stays good for several months in the freezer so you don’t need to worry about consuming it immediately like fresh produce or, even worse, it going bad quickly and having to toss it..

2). Frozen produce is relatively inexpensive. 

In comparison to fresh produce, frozen produce tends to be the more affordable option. Furthermore, it takes longer to expire so there is a lesser chance of wasting frozen produce in comparison to fresh produce.

3). Frozen produce have high nutritional content.

Frozen produce are picked at their peak ripeness, which is typically when the produce has its optimal nutrition content. On the other hand, fresh produce is often picked before it’s ripe so that it doesn’t ripen until it sits on the store shelves.

Now that you’re as excited about frozen produce as I am, let’s get to the recipe…

What You’ll Need:

Riced Cauliflower: I used frozen riced cauliflower in this recipe. If you don’t like cauliflower, you could substitute it with brown rice or another whole grain. Alternatively, you could use 1 cup of cauliflower rice and 1 cup of brown rice in this recipe.

Veggies: You’ll need peas, carrots, sweet onion, and green onions. I used frozen carrots and peas.

Eggs: You will need three eggs.

Seasoning: This recipe uses garlic, ginger, and coconut aminos. You can substitute the coconut aminos with soy sauce (not gluten-free) or tamari.

Avocado Oil: I use avocado oil to sauté the veggies. I like cooking with avocado oil because it has a high smoke point.

How to Make the Cauliflower Fried Rice:

1. Peel and chop one carrot.

2. Add avocado oil to a pan on medium heat. Sauté chopped onion, carrot, and peas on medium heat until the carrots soften.

3. Add garlic to the pan and cook for about 30 seconds.

4. Add the cauliflower rice. Continue to cook and mix the contents of the pan until the cauliflower is cooked.

5. Push ingredients to the side and add three whisked eggs directly to the pan. Scramble the eggs for about 1 minute and then mix the eggs with the rest of the ingredients.

6. Add ginger and coconut aminos to the pan and mix. Cook for a few minutes or until the eggs are fully cooked.

7. Serve in a dish and top with green onions.

Cauliflower Fried Rice

This Cauliflower Fried Rice tastes like takeout, but is packed with veggies. This recipe is gluten-free, dairy-free, and soy-free.

Equipment

  • Frying Pan

Ingredients
  

  • 2 cups Frozen Riced Cauliflower
  • 1 Carrot large
  • 1/4 cup Frozen Peas
  • 1/2 Sweet Onion
  • 2 Garlic Cloves
  • 3 Eggs
  • Ginger
  • Coconut Aminos
  • Avocado Oil
  • Green Onions to taste

Instructions

Notes

You can substitute the Coconut Aminos with Soy Sauce (not gluten free) or Tamari.
