Cauliflower Nuggets

My air fryer is one of my favorite kitchen gadgets. I love my air fryer because you can do so much with it. It enables you to air fry foods which requires much less oil than traditional frying. Additionally, my Ninja air fryer has a roast, reheat, and dehydrate option. I love roasting veggies in my air fryer because it takes much less time than roasting in a pan or in the oven and requires no stirring! I probably use my air fryer at least once per day. I recently used my air fryer to make these Cauliflower Nuggets. This recipe is a vegetarian spin on chicken nuggets. These cauliflower nuggets taste delicious and are so easy to make. This recipe only requires three ingredients and is gluten free, dairy free, paleo, and whole30.

Cauliflower Pizza Crust

Pizza is hands down one of my favorite foods. A few years ago, I began dabbling with making cauliflower pizza crusts. The biggest issues that I found was that the crusts didn’t stick together or primarily consisted of cheese. I wanted to make a cauliflower pizza crust that 1) actually stayed together, 2) was made with simple, wholesome ingredients, and 3) was dairy free and paleo friendly.

This cauliflower pizza crust is only made with four ingredients and is gluten free, dairy free, paleo, and whole30! This crust is very simple and tastes plain, similar to how a regular pizza crust would also taste plain by itself. I like to think of the crust as the canvas and and the toppings are like the paint.

Blueberry Basil Smoothie

I picked up basil from the grocery store the other week and they only had the basil plant. I decided to pot it in an old, glass peanut butter jar, thinking that it wouldn’t last long in my windowsill. I have tried to grow basil plants multiple times in my windowsill, but every time have been unsuccessful. Maybe because it’s quarantine and I’m home and my basil plant is getting the TLC it needs, but it is thriving in my windowsill! Now, I’m going to have to think about re-potting it in an actual pot..

My new basil plant as well as the warmer weather inspired me to make this Blueberry Basil smoothie. This recipe is gluten free, vegan, paleo, and whole 30. It only requires 4 ingredients to make!

Dessert Dates

If you haven’t noticed, I’m a huge fan of dates. They taste so sweet and delicious all by themselves. I like to use dates as sweeteners in recipes instead of any form of added sugar. Unlike straight sweetener such as cane sugar, coconut sugar, maple syrup or even honey, dates are sweet but contain fiber. Fiber is the indigestible are of food that are associated with several potential health benefits. Fiber also helps keep you feeling full and satisfied.

These stuffed dates are my favorite little dessert pieces. They take about 10 seconds to make and offer the perfect amount of sweetness after a meal. After dinner, I always crave something sweet, but I don’t typically have a lot of sweets around. These desserts are perfect to satisfy this sweet craving because they can be assembled quickly and provide just the right amount of sweetness.

Lite Gluten Free, Dairy Free, Added Sugar Free Pumpkin Bread

I made my Gluten Free, Added Sugar Free Pumpkin Bread a little bit differently this week. It is a very similar recipe, but has a lite spin on it. As usual, it is made with real food ingredients And let me tell you it is GOOD! This recipe makes 1 loaf, which I typically cut into 6 slices. The best part is, it is LESS THAN 200 CALORIES PER SLICE (1 slice = 1/6 loaf). That is correct! It is less calories than those bars most people are snacking on and waayyyy more delicious. Cauliflower Rice Paella

Lower carb version of your favorite paella dish! This cauliflower rice paella recipe is made using riced cauliflower instead of rice and it’s soo good. You can even get that “sticking to the pan” effect of normal paella, you just have to let the cauliflower rice cook a little longer. 

I have a smaller paella pan so the ingredients are proportional to my pan size, if you have a bigger pan, the portion size may very.
