Keto Chocolate Chia Puddings

Looking for a keto breakfast idea? Look no further! Honestly, even if you’re not doing keto, these chia puddings make the perfect breakfast or little desserts. The best part is they are super easy to make! The main preparation step is allowing the chia seeds to sit overnight to form a chia “pudding.” I like making multiple chia seeds at once, that way I have breakfast prepped for multiple days. Apple Cinnamon Scones

Caramelized apples are one of my favorite healthy treats. By caramelized apples, I mean apple slices that are sautéed in cinnamon and coconut oil. They get so fragrant and taste incredible! Apple Cinnamon is one of my all time favorite combos.

I wanted to make a healthy apple cinnamon flavored breakfast recipe and came up with these scones. They are gluten free, vegan, and contain no added sugar. They are very easy to make and make the perfect breakfast on the go.

Low Sugar Chocolate Almond Butter Bars

I have a few guy friends who have found a lot of success on the keto diet and were able to lose a decent amount of weight. I’m overall neutral when it comes to the keto diet. I’m not a proponent of the keto diet, or against it. I enjoy eating fruit (as you can see by my frequent smoothie bowl posts), so I don’t think it would be a sustainable or satisfying diet for me. However, after hearing friends’ success stories on the keto diet, I am now curious.

Dessert Dates

If you haven’t noticed, I’m a huge fan of dates. They taste so sweet and delicious all by themselves. I like to use dates as sweeteners in recipes instead of any form of added sugar. Unlike straight sweetener such as cane sugar, coconut sugar, maple syrup or even honey, dates are sweet but contain fiber. Fiber is the indigestible are of food that are associated with several potential health benefits. Fiber also helps keep you feeling full and satisfied.

These stuffed dates are my favorite little dessert pieces. They take about 10 seconds to make and offer the perfect amount of sweetness after a meal. After dinner, I always crave something sweet, but I don’t typically have a lot of sweets around. These desserts are perfect to satisfy this sweet craving because they can be assembled quickly and provide just the right amount of sweetness.

5 Ingredient Pancake Batter

Fact: you do not need pancake batter to make your own pancakes.

I have been making my own pancake batter a lot lately and have been seriously loving it. I love making pancakes with ingredients that I already have in my pantry. I have also learned to mix them in a way so they are nutritious and fiber rich, but still taste delicious!

Its no secret that I love oatmeal. It is a staple in my breakfast rotation and I also regularly make pancakes using oat flour. HOWEVER, you do not need oat flour to make pancakes. You can make your own. This is easy and cost efficient. In order to make pancake batter, I have been blending gluten free oats with chia seeds, fruit, and almond milk and adding a tsp of baking soda. Each of these ingredients are critical.

Cheesy Kale Chips

Yet another reason why I love my air fryer – it also functions as a dehydrator! I used to love making kale chips in the oven but it legit took forever and wouldn’t always cook even. Dehydrating my kale chips in the air fryer took them to the NEXT LEVEL. It only took about 1 1/2 hours and they were the perfect level of crunchy.

These kale chips have a delicious, cheesey flavor and make the perfect snack. The best part is they are also gluten free and vegan. That’s right, they have a cheesey flavor but are still dairy free! How is that? See ingredient details below!
