Vegan Pistachio Pesto

If you follow my Instagram account (@wellbymel_), you know that I LOVE Trader Joe’s cauliflower gnocchi. It is gluten free, dairy free, and only made with 5 ingredients- cauliflower, cassava flour, potato starch, olive oil, and salt! And it tastes great- it tastes like actual gnocchi! This is one of my go- to easy dinners because it is frozen and so easy to make! All you need to do is cook it on a skillet for a few minutes until fully thawed and crispy and then top with the sauce of your choice. Note: do not follow the package instructions to cook the gnocchi or else they will turn out mushy.

Today, I chose a pistachio pesto sauce. I have had a bag of pistachios in my pantry for a few months and wasn’t sure what to do with them. I’m trying to be more conscious of food waste so I decided to re-purpose them to make pesto. It was super yummy and really easy! This pesto is dairy free and uses nutritional yeast for a cheesy flavor. See full recipe below!

Gluten-Free Falafel

This may be the easiest recipe I have ever made! It doesn’t involve many ingredients, only took me about 20 minutes to make, and is naturally delicious. This recipe is gluten-free and vegan. It makes about 10 falafel.

I topped the falafel over a salad bowl with tahini sauce. You could also throw them in a pita. See recipe below!

Rainbow Soba Noodle Bowl

There is nothing like a bright, colorful veggie bowl! Not only is this bowl pretty to look at, but it is full of nutrient-dense veggies! It is important to eat a colorful plate in order to get a variety of nutrients. Plus, colorful bowls are just fun to eat!

I love this Rainbow Soba Noodle Bowl because it tastes so fresh and delicious. It is topped with a Thai-inspired dressing, which gives the bowl a fun and delicious flavor. This bowl is completely plant-based and soy free. This recipe is soy free as it is made with coconut aminos. If you haven’t heard of coconut aminos, it is a soy-free alternative to soy sauce. You can find it at most grocery stores in the soy sauce section.

BBQ Jackfruit Taco Bowl

Have you ever cooked jackfruit before? Have you ever heard of jackfruit before?

I had only recently heard of jackfruit. I made it for lunch for the first time roasted in bbq sauce and it was so good, I felt the need to spread the news! Jackfruit, as the name implies is a fruit. However, if you chop it up and roast it in BBQ sauce, it actually tastes like pulled meat! It also resembles pulled meat. BBQ Jackfruit is so easy to make and is the perfect add to tacos, taco bowls, or to any bbq!

BBQ Jackfruit is the perfect compliment to any plant based recipe. I love that this meat alternative, is simply a fruit! So many meat alternatives are highly processed, high in sodium, and just don’t seem great for you! I love that jackfruit is completely natural and only 1 ingredient! I am a firm believer in eating real food so bbq jackfruit is a food that I can easily get on board with!

For this recipe, I used canned jackfruit that I found at Trader Joes. I put added the bbq jackfruit to a taco bowl to create a healthy and delicious, plant based Mexican meal.

I made this cauliflower crust with riced cauliflower, cassava flour, 2 eggs, salt, avocado oil and topped with mozzarella, tomato sauce, fresh basil, and tomatoes. The cauliflower crust recipe is gluten free, dairy free, paleo, and whole30. However, this is subject to change depending on the toppings you chose to put on the pizza (for example, if you topped the crust with cheese, the pizza will not be dairy free, paleo, or whole30). Loaded Sweet Potato

This past weekend I watched the marathon in NYC. I ran the NYC marathon the previous year, so going to watch it this year was definitely nostalgic for me. It was such a great experience!

Lentil Bolognese

This lentil bolognese makes the perfect healthy comfort food! I love serving it over spaghetti squash for a delicious, and veggie-packed meal. I’m definitely on a kick with all of the fall seasonal foods, but I’m especially loving spaghetti squash right now. Spaghetti squash is so easy to make and I love using it as a substitute for traditional pasta. This winter veggie is packed with vitamins, minerals, other nutrients, and fiber.

Try making this lentil bolognese and serving it over spaghetti squash. This recipe is gluten free, dairy free, contains no added sugar, and is vegan and vegetarian friendly.
