Have you been apple picking recently? This past weekend, I went apple picking with some friends in upstate New York. I love apple season, so immediately started making some apple treats once I returned home to Brooklyn. I have personally been having my Apple Crumble (gluten free and dairy free) on repeat lately. It’s such a yummy treat, but full of fruits, veggies, and whole grains. This week for breakfast I have been making Apple Cinnamon oats! This breakfast recipe is both gluten free and vegan.

Low Sugar Reeses

Who’s ready for Halloween? If you’re like me and already looking for some healthier Halloween treat ideas, look no further! This recipe is a healthier twist on your favorite reeses candy. These Low Sugar Reeses are made with only two ingredients- Lily’s Dark Chocolate Chips and natural peanut butter. Lily’s Dark Chocolate chips are vegan and sweetened the no-sugar sweetener, stevia. Be sure to chose a peanut butter without added sugar to keep these candies low in sugar.

This recipe is so easy to make- all you need to do is melt ingredients, add to baking cups, and let it sit in the freezer to set! This recipe is gluten free, vegan, and low in sugar.

Cauliflower Nuggets

My air fryer is one of my favorite kitchen gadgets. I love my air fryer because you can do so much with it. It enables you to air fry foods which requires much less oil than traditional frying. Additionally, my Ninja air fryer has a roast, reheat, and dehydrate option. I love roasting veggies in my air fryer because it takes much less time than roasting in a pan or in the oven and requires no stirring! I probably use my air fryer at least once per day. I recently used my air fryer to make these Cauliflower Nuggets. This recipe is a vegetarian spin on chicken nuggets. These cauliflower nuggets taste delicious and are so easy to make. This recipe only requires three ingredients and is gluten free, dairy free, paleo, and whole30.

Bell Pepper Nachos

Looking for a healthier football Sunday snack? I’ve got you covered! These grain-free nachos contain extra veggies- bell peppers! You can top these bell pepper slices with whatever nacho toppings you desire. I share below the toppings that I used to make my bell pepper nachos, but you can use any toppings that you like. This low carb snack is gluten free and packed with veggies. This recipe makes about 2 servings of nachos.

Low Sugar Pralines

I have been on a serious praline kick lately. I love Trader Joes pralines, but I don’t love the ingredients. Most praline recipes are loaded with sugar, so I wanted to make a lower sugar version of this delicious treat. These low sugar pralines are sweetened with monkfruit sweetener. Monkfruit sweetener is a zero calorie, zero sugar natural alternative to sugar. For this recipe, I used Lakanto Monkfruit Baking Sweetener.

Shrimp with Mango Avocado Salsa

As the weather gets warmer and we approach summer, I love fresh, hydrating recipes. This Shrimp With Mango Avocado Salsa is one of my favorites! It is so simple and delicious and tastes so refreshing.

I cook the shrimp with garlic and honey, top it over a mango and avocado salsa, and serve it cold. You can substitute the mango for cubed pineapple as well and it tastes equally delicious. I top the dish with a squeeze of lime juice.

Blueberry Basil Smoothie

I went to pick up basil from the grocery store the other week and they only had the basil plant. Because of this, I decided to pot the basil plant in an old, glass jar. I figured it wouldn’t last long in my windowsill since I have tried to grow basil plants multiple times in my windowsill and have so far been unsuccessful. Maybe because it’s quarantine and I’m home more and my basil plant is getting the TLC it needs, but it is thriving in my windowsill! Now, I’m going to have to think about re-potting into an actual pot.. My new, thriving basil plant as well as the warmer weather inspired me to make this Blueberry Basil smoothie. This recipe is gluten free, vegan, paleo, and whole 30 and only requires 4 ingredients to make!
