Cauliflower Nuggets

My air fryer is one of my favorite kitchen gadgets. I love my air fryer because you can do so much with it. It enables you to air fry foods which requires much less oil than traditional frying. Additionally, my Ninja air fryer has a roast, reheat, and dehydrate option. I love roasting veggies in my air fryer because it takes much less time than roasting in a pan or in the oven and requires no stirring! I probably use my air fryer at least once per day. I recently used my air fryer to make these Cauliflower Nuggets. This recipe is a vegetarian spin on chicken nuggets. Bell Pepper Nachos

Looking for a healthier football Sunday snack? I’ve got you covered! These grain-free nachos contain extra veggies- bell peppers! You can top these bell pepper slices with whatever nacho toppings you desire. I share below the toppings that I used to make my bell pepper nachos. This low carb snack is gluten free and packed with veggies. This recipe makes about 2 servings of nachos.

Low Sugar Pralines

I have been on a serious praline kick lately. I love Trader Joes pralines, but I don’t love the ingredients. Most praline recipes are loaded with sugar, so I wanted to make a lower sugar version of this delicious treat. These low sugar pralines are sweetened with monkfruit sweetener. Monkfruit sweetener is a zero calorie, zero sugar natural alternative to sugar. For this recipe, I used Lakanto Monkfruit Baking Sweetener.

Shrimp with Mango Avocado Salsa

As the weather gets warmer and we approach summer, I love fresh, hydrating recipes. This Shrimp With Mango Avocado Salsa is one of my favorites! It is so simple and delicious and tastes so refreshing.

The shrimp is cooked in honey and garlic for flavor. It is then topped over a mango avocado salsa and served cold. You can substitute the mango for 1 cup cubed pineapple as well and it tastes equally delicious. This dish is topped with a fresh squeeze of lime juice.

Cauliflower Pizza Crust

Pizza is hands down one of my favorite foods. A few years ago, I began dabbling with making cauliflower pizza crusts. The biggest issues that I found was that the crusts didn’t stick together or primarily consisted of cheese. I wanted to make a cauliflower pizza crust that 1) actually stayed together, 2) was made with simple, wholesome ingredients, and 3) was dairy free and paleo friendly.

This cauliflower pizza crust is only made with four ingredients and is gluten free, dairy free, paleo, and whole30! This crust is very simple and tastes plain, similar to how a regular pizza crust would also taste plain by itself. I like to think of the crust as the canvas and and the toppings are like the paint.

Blueberry Basil Smoothie

I picked up basil from the grocery store the other week and they only had the basil plant. I decided to pot it in an old, glass peanut butter jar, thinking that it wouldn’t last long in my windowsill. I have tried to grow basil plants multiple times in my windowsill, but every time have been unsuccessful. Maybe because it’s quarantine and I’m home and my basil plant is getting the TLC it needs, but it is thriving in my windowsill! Now, I’m going to have to think about re-potting it in an actual pot..

My new basil plant as well as the warmer weather inspired me to make this Blueberry Basil smoothie. This recipe is gluten free, vegan, paleo, and whole 30. It only requires 4 ingredients to make!

The Easiest Banana Bread Recipe

During this quarantine, it seems like everyone is making banana bread. I had two very ripe bananas in my kitchen and decided to get on the banana bread train. I am a very lazy baker so wanted to create a truly easy banana bread recipe. This recipe is so simple. You only need 6 simple ingredients to make this banana bread. To make it, all you need to do is blend ingredients and bake and you’ve got a healthy and delicious banana bread!

This banana bread tastes great by itself. I also like to eat mine topped with a slather of peanut butter.
