I picked up basil from the grocery store the other week and they only had the basil plant. I decided to pot it in an old, glass peanut butter jar, thinking that it wouldn’t last long in my windowsill. I have tried to grow basil plants multiple times in my windowsill, but every time have been unsuccessful. Maybe because it’s quarantine and I’m home and my basil plant is getting the TLC it needs, but it is thriving in my windowsill! Now, I’m going to have to think about re-potting it in an actual pot..
My new basil plant as well as the warmer weather inspired me to make this Blueberry Basil smoothie. This recipe is gluten free, vegan, paleo, and whole 30. It only requires 4 ingredients to make!
This smoothie is a very light recipe. If you wanted to add more substance to make it more of a meal you could add some protein and/or fat to the recipe. For protein, you could add 1 scoop of vanilla protein powder. For added fat, you could add 1/4 avocado.

Ingredients:
- 1 cup frozen blueberries
- 1 cup frozen riced cauliflower
- 1 cup almond milk
- Handful of basil leaves
Directions:
Blend in a powerful blender (such as a Vitamix) and enjoy! If you don’t have a strong blender, you may need to add additional almond milk to assist in blending.
