Apple Cinnamon Scones

Caramelized apples are one of my favorite healthy treats. By caramelized apples, I mean apple slices that are sautéed in cinnamon and coconut oil. They get so fragrant and taste incredible! These Apple Cinnamon Scones feature (you guessed it) caramelized apples. These scones are gluten free, vegan, and contain no added sugar.

Unlike most scone recipes, this recipe is made with simple, wholesome ingredients.

Ingredients in Apple Cinnamon Scones:

Apples: You, of course, can’t make apple cinnamon scones without apples!

Oats: You will need rolled oats for this recipe. Be sure to purchase gluten-free rolled oats if you need to make this recipe gluten-free. The oats and the cassava flour are used as the “flour” in this recipe.

Cassava Flour: Cassava flour is a root vegetable flour. It is naturally gluten-free.

Chia Seeds: Chia seeds are an incredibly nutrient-dense food. They are packed with nutrients and fiber. Chia seeds are used to bind these scones together.

Dates: These scones contain no added sugar. They are naturally sweetened by the dates. I love using dates as a sweetener in recipes because they taste so naturally sweet, but are packed with nutrients and fiber. I recommend soaking the dates prior to blending to help them blend easier.

Coconut Oil: Coconut oil is used to sauté the apples. The apples soften and taste so naturally sweet and delicious.

Almond Milk: I used almond milk in this recipe, but you can use any nut milk of your preference. I recommend using an unsweetened variety.

Cinnamon: Cinnamon is used to flavor this recipe.

Baking Soda: You will need a little bit of baking soda for this recipe.

Directions:

  1. Heat coconut oil until it is a liquid. Add 1/4 cup of coconut oil to a bowl. Add 2 tbsp chia seeds to the same bowl.
  2. Cut one of the apples into small slices.
  3. Place 1 1/2 cup oats, apple slices, and 5 dates into a food processor. I recommend soaking the dates prior to blending to help them blend easier. Pulse for a minute or two. Add 1/4 cup almond milk and blend the mixture for another minute. There should be no large pieces of dates or apples. If there are, continue to blend until the mixture is more consistent. Add the contents of the food processor to the bowl.
  4. Add 1/4 cup cassava flour, cinnamon (to taste), and another 1/4 cup of almond milk to the bowl. Mix until smooth.
  5. The batter should be thick. On a baking dish, form the batter into a circular shape, a little smaller than the size of a personal pizza. With a knife, make slits in the batter into 8 pieces. Do not separate. You will use these slits as a guideline to cut the cooked scones into 8 pieces once its cooked.
  6. Cook the scones in the oven for 25 minutes at 375 deg.
  7. While the scones are cooking, cut the second apple into slices.
  8. In a frying pan, sautéed the apple slices with 1 tsp coconut oil and cinnamon (to taste). Sautéed until the apples soften and are fragrant.
  9. Remove the cooked scones from the oven and cut the scones along the slits into 8 pieces. Top the scones with the sautéed apple slices.

Notes

You can substitute cassava flour with coconut flour.
