Apple Cinnamon Oats

Have you been apple picking recently? This past weekend, I went apple picking with some friends in upstate New York. I love apple season and making recipes with fresh, seasonal apples. Once I returned home to Brooklyn, I immediately put the apples we picked to use and started making a variety of different apple recipes. For breakfast all of this week, I have been making this Apple Cinnamon Oatmeal. They are made with just a few, simple ingredients and the recipe is both gluten free and vegan.

The sautéed apples are really the star of this Apple Cinnamon Oatmeal. The apples are sautéed with coconut oil and cinnamon. The sautéed apples come out perfectly soft and taste so naturally sweet and delicious.

What You’ll Need to Make the Apple Cinnamon Oatmeal:

Apples: You, of course, can’t make Apple Cinnamon Oats without apples! I use a honey crisp apple, but you can use any variety that you like.

Rolled Oats: You will need rolled oats for this recipe. Be sure to purchase gluten-free rolled oats if you need to make this recipe gluten-free.

Almond Milk: I used almond milk, but you can use any milk of your preference in this recipe. I recommend using an unsweetened variety.

Chia Seeds: Chia seeds are an incredibly nutrient-dense food and are packed with fiber.

Maple Syrup: Maple syrup is used to sweeten this recipe.

Coconut Oil: You will need coconut oil to sauté the apples.

Cinnamon: Cinnamon is used to flavor this recipe.

Almond Butter: The almond butter is an optional ingredient. You can top the oats with almond butter for some added healthy fat.

Directions:

  1. Slice apple into cubes. Sautée apple slices in a pan with coconut oil and cinnamon. Cook until apple slices have softened.
  2. Add oats, chia seeds, and almond milk to a bowl. Microwave for about 3 minutes or until the oats have softened.
  3. Remove the bowl from the microwave. Add maple syrup to the bowl and stir to mix.
  4. Top oatmeal with sautéed cinnamon apples and almond butter (optional).
