Hi, I’m Mel! I’m so excited to have you visit my page! I love all things health and wellness and am a firm believer in eating real food. I am currently a Masters candidate at Columbia University, studying Nutrition Education. Following the program, I will pursue RD accreditation. 

I grew up in Sarasota, Fl and received my undergraduate degree in Biological Engineering from Cornell University.

On my blog, I share simple, healthy recipes that taste delicious! There is a misconception that eating healthy is bland and unappetizing, but it doesn’t have to be! I truly believe that eating healthy can be fun and delicious and I hope that my page can help inspire others on how to put together delicious and healthy meals.

My recipes are made with real food ingredients and include options for all diets (gluten-free, vegan, paleo, whole30). I also share everyday wellness tips, including posts on nontoxic living.

MY STORY

After college is when I really became interested in nutrition. I was cooking for myself and wanted to eat healthy so began experimenting with cooking different healthy recipes. Nutrition quickly became my hobby. Fast forward five years later, and I found myself spending almost all of my free time engrossed in nutrition- reading studies by Dr. T. Colin Campbell, watching documentaries on the various food industries, and listening to wellness podcasts. I even bought a book about the microbiome as beach leisure reading. I quickly realized that nutrition was more than just a hobby- it is my passion and I wanted to make it my career.

I started this blog in May 2018 while considering a career change into the field of nutrition. At age 27, I was afraid that I was too invested in my current career path and was too “old” to make a career change. I started this blog as well as my instagram account, @wellbymel_ , as a way to enable myself to post healthy recipes and really decide if this is something that I was interested in doing long term. The verdict? I love it and couldn’t be happier to be back in school studying nutrition!

In addition to cooking healthy food, I also love to sweat! I’m a former collegiate swimmer, marathoner, and love to swim, run, and do almost any kind of exercise class. When I’m not in the kitchen or working out, you can also find me drinking margaritas with friends – it’s all about balance 😉
