Apple Cinnamon Oats

Have you been apple picking recently? This past weekend, I went apple picking with some friends in upstate New York. I love apple season, so immediately started making some apple treats once I returned home to Brooklyn. I have personally been having my Apple Crumble (gluten free and dairy free) on repeat lately. It’s such a yummy treat, but full of fruits, veggies, and whole grains. This week for breakfast I have been making Apple Cinnamon oats! This breakfast recipe is both gluten free and vegan.

To make this recipe, first you need to sauté the apples with cinnamon and coconut oil. Sautéed apples are my favorite! I also use sautéed apples in my Apple Cinnamon Scones recipe and Fall Veggie Hash. They come out so perfectly soft and taste so naturally sweet and delicious!

Ingredients:

  • 1/2 cup rolled oats
  • 1 cup almond milk
  • 1 tbsp chia seeds
  • 1 tsp maple syrup
  • 1 small apple
  • 1 tsp coconut oil
  • Cinnamon to taste

How to Make Apple Cinnamon Oats:

  1. Slice apple into cubes. Sautée apple slices in a pan with coconut oil and cinnamon. Cook until apple slices have softened.
  2. Add oats, chia seeds, and almond milk to a bowl. Microwave for about 3 minutes or until the oats have softened.
  3. Remove the bowl from the microwave. Add maple syrup to the bowl and stir to mix.
  4. Top oatmeal with sautéed cinnamon apples.

Ingredients
  

  • 1/2 cup Gluten-free rolled oats
  • 1 cup Almond Milk
  • 1 tbsp Chia Seeds
  • 1 tsp Maple Syrup
  • 1 Apple small
  • 1 tsp Coconut Oil
  • Cinnamon to taste

Instructions
 

  • Slice apple into cubes. Sautée apple slices in a pan with coconut oil and cinnamon. Cook until apple slices have softened.
  • Add oats, chia seeds, and almond milk to a bowl. Microwave for about 3 minutes or until the oats have softened.
  • Remove the bowl from the microwave. Add maple syrup to the bowl and stir to mix.
  • Top oatmeal with sautéed cinnamon apples and almond butter (optional).
