Banana Oatmeal Pancakes

Fact: you do not need pancake batter to make your own pancakes.

I have been making my own pancake batter a lot lately and have been seriously loving it. I love making pancakes with ingredients that I already have in my pantry. These Banana Oatmeal Pancakes are nutritious, rich in fiber, and taste delicious!

Its no secret that I love oatmeal. It is a staple in my breakfast rotation and I also regularly make pancakes using oat flour. HOWEVER, you do not need oat flour to make pancakes. You can make your own. This is easy and cost efficient. In order to make pancake batter, I have been blending gluten free oats with chia seeds, banana, and almond milk. Each of these ingredients are critical.

I love using oats because they are an all natural base to pancakes. They are a simple flavor and textures to add to. The chia seeds add a dose of fiber and really helps the batter really bind together. The almond milk is used to combine the oats and chia seeds. The fruit adds a sweet and delicious flavor! I love using bananas and also seasonal fruits. You can also add spices for added flavor- I like adding cinnamon and nutmeg.

Now how do you make it? This is the EASIEST part. All you have to do is place those ingredients in a blender and blend for a couple of minutes until the batter texture is consistent. The batter will be thick. Next, cook into pancakes using cooking oil or butter of your choice! This recipe makes one serving of pancakes.

  • 1/2 cup gluten free rolled oats
  • 1 ripe banana
  • 3/4 cup almond milk (use store bought or make your own almond milk)
  • 1- 2 tbsp chia seeds
  • Optional: cinnamon and nutmeg seasoning

  • Blender
  • Frying Pan or Pancake Griddle

Ingredients
  

  • 1/2 cup Gluten Free Rolled Oats
  • 1 cup Banana
  • 3/4 cup Almond Milk
  • 1-2 tbsp Chia Seeds
  • Cinnamon, Nutmeg optional seasonings

Instructions
 

  • Place all ingredients in a blender and blend until the batter texture is smooth.
  • Cook the pancake batter into pancakes using coconut oil or vegan butter.
