Fresh Gazpacho πŸ’ƒπŸΌ

When the weather gets warmer, I crave all of the hydrating, fresh foods. I love this gazpacho dish because it’s super hydrating and refreshing – perfect for summer! I paired it with Sakara Life chia tortillas to dip. This recipe is made completely with real food ingredients and is raw, vegan, and gluten free. All you need is a blender to make!

Ingredients:

  • 3 tomatoes
  • 4 stalks of celery
  • 5 slices of cucumber
  • 1/2 red bell pepper
  • 2 tbsp sliced red onion
  • 1 garlic clove
  • 2 dates
  • juice of 1/2 lemon
  • optional: fresh dill

Directions:

  1. Add all ingredients to a blender and blend until all ingredients are thoroughly mixed. Optional: Add dill to taste.
  2. Allow to sit in the refrigerator for at least one hour to let all of the flavors come together – so worth it but also so hard to wait! πŸ˜¬πŸ’β€β™€οΈ
  3. Enjoy with crackers of your choice!
