When the weather gets warmer, I crave all of the hydrating, fresh foods. I love this gazpacho dish because it’s super hydrating and refreshing – perfect for summer! I paired it with Sakara Life chia tortillas to dip. This recipe is raw, vegan, and gluten free. All you need is a blender to make!
4 stalks of celery
5 slices of cucumber
1/2 red bell pepper
2 tbsp sliced red onion
1 garlic clove
juice of 1/2 lemon
optional: fresh dill
- Add all ingredients to a blender and blend until all ingredients are thoroughly mixed. Optional: Add dill to taste.
- Allow to sit in the refrigerator for at least one hour to let all of the flavors come together – so worth it but also so hard to wait! 😬💁♀️
- Enjoy with crackers of your choice!
