Fresh Gazpacho ๐Ÿ’ƒ๐Ÿผ

When the weather gets warmer, I crave all of the hydrating, fresh foods. I love this gazpacho dish because itโ€™s super hydrating and refreshing โ€“ perfect for summer! I paired it with Sakara Life chia tortillas to dip. This recipe is made completely with real food ingredients and is raw, vegan, and gluten free. All you need is a blender to make!

 

Ingredients:

3 tomatoes

4 stalks of celery

5 slices of cucumber

1/2 red bell pepper

2 tbsp sliced red onion

1 garlic clove

2 dates

juice of 1/2 lemon

optional: fresh dill

 

Directions:

  1. Add all ingredients to a blender and blend until all ingredients are thoroughly mixed. Optional: Add dill to taste.
  2. Allow to sit in the refrigerator for at least one hour to let all of the flavors come together โ€“ so worth it but also so hard to wait!ย ๐Ÿ˜ฌ๐Ÿ’โ€โ™€๏ธ
  3. Enjoy with crackers of your choice!
