Lately I’ve been on a kick using Trader Joe’s frozen beet chunks. I love adding beets to my smoothies and this makes it soo much easier. This berry beet smoothie bowl has been my freaking jam lately. It is so delicious and creamy and tastes so refreshing.
Note: This recipe is labeled as vegan, but is topped with bee pollen (optional). If you are trying to follow a vegan diet, you may want to skip the bee pollen topping.
1/2 cup frozen berries
1/2 cup frozen beets
1 cup frozen riced cauliflower
1/2 avocado or 1 spoonful sunflower butter
1 scoop collagen peptides
About 1.5 cups almond milk or until you get the right consistency
Optional: 1 fresh date for added sweetness
Blend until smooth and enjoy! I like topping it with honey bee pollen and chia seeds.
